Bordeaux is renowned for its wines broadly speaking, and for its reds specifically; however, should there be one white from this region that you must sample, it is undoubtedly La Clarté de Haut-Brion. This wine is the result of a blend from two legendary estates: on one hand, Château Haut-Brion; on the other, Château La Mission Haut-Brion. The combination could not be more exquisite.
 
In this instance, it is imperative to consider the terroir from which these vineyards spring, paying special attention to the soil, composed of gravel and clay. At the surface, one finds small pebbles that act as a layer over the subsoil, made of limestone and sand, far more permeable and malleable, where the true essence of the terroir lies. Together, they form the perfect amalgamation; while the gravel serves as a drainage system for the soil, the limestone retains water, creating a highly intriguing water table (especially during the drier months).
 
At Château Haut-Brion, three white grape varieties are cultivated: sauvignon gris, sauvignon blanc, and sémillon. The latter two are used to craft La Clarté de Haut-Brion, in a manner that is entirely respectful and minimally invasive. This philosophy of least possible interference in the wine's creation extends from the vineyard to the cellar. In the former, the aim is to always find the best fruit without disrupting or contaminating the rest of the ecosystem. This, of course, involves eschewing chemical products and relying on manual, artisanal labor. Similarly, in the cellar, La Clarté de Haut-Brion is produced using indigenous yeasts, spontaneous fermentations, and extended aging in both new and used barrels. Each vintage, depending on the harvest, will see a variation in the percentage of each type of barrel used.
