About Tagaro Cinquenoci Primitivo
Before becoming wine, Cinquenoci was a symbol.
A small hand-drawn figure on the whitewashed walls of rural houses. It wasn't there for decoration. It was a way of asking the land to respond, for the harvest to endure, for work to continue.
In the rural communities of southern Italy, these symbols once coexisted with daily life. They were etched into the stone as one might leave an intention, a hope, or a minimal protection against the uncertainties of the countryside.
Tagaro Cinquenoci Primitivo is born from this idea. Of something small that attempts to nurture something vast.
Produced in southern Italy, in the region of Puglia, the winery Tagaro embarks on a project deeply intertwined with Mediterranean culture and its understanding of the land. A landscape where vineyards coexist with dry stone constructions, olive trees, and a light that dictates the rhythm of all growth.
Tagaro Cinquenoci Primitivo is supported by the IGP Puglia, a geographical indication that allows freedom of interpretation of the territory and local varieties, while always maintaining a connection to its origin. The grapes come from old primitivo vines, spread across various plots in the surroundings of the Valle d'Itria. These aged vines have naturally reduced their yield, concentrating energy into each cluster. They do not seek volume, but rather true intensity in the fruit.
The soils are clay-limestone, with limestone presence, poor in organic matter. This type of terrain forces the vine to delve deep to survive, creating balance, structure, and character. The climate is warm Mediterranean, with long, dry, and bright summers. The contrast between daytime heat and nighttime coolness allows for a certain natural tension in the ripening of the primitivo. The harvest is carried out manually, selecting the clusters at their optimal ripeness.
Once at the winery, the grapes are destemmed, separating the stalk to work solely with the most expressive part of the fruit. The must ferments in stainless steel tanks, where sugars are transformed into alcohol in a controlled manner, respecting the fruit profile of the variety. During maceration, contact with the skins allows for the extraction of colour, structure, and aromas. It is at this stage that the wine begins to define itself in texture and character. Subsequently, it undergoes malolactic fermentation, softening the acidity and adding roundness. Finally, the wine is stabilised, clarified if necessary, and bottled, maintaining a youthful, direct, and expressive style where the fruit takes centre stage.
Tagaro Cinquenoci Primitivo is a wine that captures an ancient gesture and brings it into the present without artifice. Perhaps that's why it works so well today; because it needs no time to prove what it is. Any excuse is a good one to open it.
