About Domaine François Carillon Cap au Sud Chardonnay

Since 2010, when his path diverged from that of his brother, François Carillon has been at the helm of 16 hectares spread across Puligny-Montrachet, Chassagne-Montrachet, and Saint-Aubin. However, this variety of regions did not prevent him from venturing further, down to the south of France, when in 2021 he lost part of his harvests due to spring frosts. From this new expedition, Domaine François Carillon Cap au Sud Chardonnay was born.
 
As a rule, there is no vineyard that François Carillon cannot master. Regardless of the location, it makes no difference. Currently, this vigneron is an expert in vine cultivation thanks to his many years of dedication to the family business. There, alongside his brother Jacques, they managed their father's winery; while one focused on the vineyard, the other concentrated on the cellar, forming the perfect duo. However, in this new solo venture, François has nothing to fear as the procedures in the winery remain the same as those learned over the years.
 
Domaine François Carillon Cap au Sud Chardonnay is a single-varietal chardonnay that grows on a blend of clay and limestone soils and is vinified in the winery that Carillon operates in Puligny-Montrachet. After the harvest, Domaine François Carillon Cap au Sud Chardonnay is taken to the winery and pressed, allowing the must to settle for a time to ensure it reaches fermentation as clean as possible. This step is known as clarification and involves lowering the temperature of the liquid so that suspended substances settle at the bottom of the tank. Once achieved, the liquid is transferred to French oak barrels where Domaine François Carillon Cap au Sud Chardonnay will ferment and rest for at least a year. After this period, Domaine François Carillon Cap au Sud Chardonnay is bottled according to lunar cycles as, at all times, the work rhythms are governed by biodynamic principles.
